Italian-Style Meatloaf
Ingredients
For the meatloaf:
- 2 lbs ground beef (or beef/pork mix for extra flavor)
- 1 cup Italian seasoned breadcrumbs (or plain breadcrumbs + 1 tsp Italian seasoning)
- ½ cup grated Parmesan cheese
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- ½ cup milk
- 2 tbsp fresh basil or parsley, chopped (or 1 tsp dried)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
For the topping:
- 1 ½ cups marinara sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 2 tbsp Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
- Mix the meatloaf:
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, onion, garlic, eggs, milk, basil, oregano, salt, and pepper.
- Mix gently until just combined—don’t overwork or it’ll get tough.
- Shape the loaf:
- Place the mixture on the prepared sheet or pan and shape into a loaf (about 8×4 inches).
- Bake:
- Bake uncovered for 40 minutes.
- Add marinara + cheese:
- Remove from oven and spoon 1 cup marinara sauce over the top.
- Sprinkle mozzarella and extra Parmesan.
- Bake another 15–20 minutes, until cheese is bubbly and meatloaf reaches 160°F (70°C) internal temperature.
- Serve:
- Let rest 10 minutes before slicing.
- Garnish with fresh basil and serve with extra marinara on the side.
Tips & Variations
- For a stuffed version, place half the meat mixture in the pan, layer with mozzarella slices, then cover with the rest of the beef before baking.
- Pair with garlic bread and a green salad for a full Italian-inspired dinner.
- Leftovers are incredible as a meatloaf sandwich on ciabatta with a little marinara.
