Italian-Style Meatloaf

Ingredients

For the meatloaf:

  • 2 lbs ground beef (or beef/pork mix for extra flavor)
  • 1 cup Italian seasoned breadcrumbs (or plain breadcrumbs + 1 tsp Italian seasoning)
  • ½ cup grated Parmesan cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp fresh basil or parsley, chopped (or 1 tsp dried)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano

For the topping:

  • 1 ½ cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. Mix the meatloaf:
    • In a large bowl, combine ground beef, breadcrumbs, Parmesan, onion, garlic, eggs, milk, basil, oregano, salt, and pepper.
    • Mix gently until just combined—don’t overwork or it’ll get tough.
  3. Shape the loaf:
    • Place the mixture on the prepared sheet or pan and shape into a loaf (about 8×4 inches).
  4. Bake:
    • Bake uncovered for 40 minutes.
  5. Add marinara + cheese:
    • Remove from oven and spoon 1 cup marinara sauce over the top.
    • Sprinkle mozzarella and extra Parmesan.
    • Bake another 15–20 minutes, until cheese is bubbly and meatloaf reaches 160°F (70°C) internal temperature.
  6. Serve:
    • Let rest 10 minutes before slicing.
    • Garnish with fresh basil and serve with extra marinara on the side.

Tips & Variations

  • For a stuffed version, place half the meat mixture in the pan, layer with mozzarella slices, then cover with the rest of the beef before baking.
  • Pair with garlic bread and a green salad for a full Italian-inspired dinner.
  • Leftovers are incredible as a meatloaf sandwich on ciabatta with a little marinara.
